A 'Cheaper' Meat Slicer Cost Us $9,475. That's Why I Bought a Hobart 120 Handler Welder

I've been handling equipment purchasing for our catering kitchen and metal fabrication shop for about eight years now. My job covers everything from commercial dishwashers to welders, and I've made enough bad buying decisions to keep a running list of lessons. The most expensive one started in January 2024 with a meat slicer.

The main slicer in our kitchen finally gave up. The blade gap wouldn't hold, and every slice came out ragged. My chef sent me a link with a note: "This looks exactly like a hobart 1712 meat slicer, but half the price."

Turns out it matters. The weight difference mostly came from thinner steel and a smaller motor housing—exactly the parts that matter when a machine runs continuously.

My first thought: not falling for that again.

I'm not going to tell you to always buy the most expensive option. That's lazy advice. But I will tell you to stop calculating based on the invoice alone.

Here's the shortcut I use now:

Compare total cost of ownership, not purchase price.

Total cost = purchase price + maintenance + downtime + training + resale value.

If you don't know the maintenance cost and resale value, ask. If the seller can't answer, that's your answer.

A few tricks that work:

  • Check the used market. A 1990s Hobart 1712 meat slicer still sells for real money. Budget brands barely appear on the used market, because nobody wants an unknown machine with no parts chain.
  • Call a repair shop—one that works on commercial kitchen gear or welding equipment—and ask which brand they'd buy. They see broken machines every week. That's worth more than any spec sheet.
  • Convert price into cost per working hour: a $1,875 machine that runs 8 years is cheaper than a $1,299 machine that dies in 18 months.

The Bottom Line

The cheap slicer's company emailed me a month after the motor died to ask how the machine was holding up. I didn't reply.

I did hang the TCO calculation on the wall of our purchasing office. My boss saw it and said, "This is kind of too simple."

"That's the point," I said. "A complicated formula won't survive contact with a tempting price tag."
